Southern Country Ham & Red Eye Gravy

When the rest of the world has been out splashing in the pool and enjoying the summer weather, I have been laying on the couch watching hours of TV. If you know me at all, this is so NOT my personality! I am still recovering from my first trimester of pregnancy and definitely craving comfort food and lots of rest.

One of my favorite shows is Mind of a Chef on PBS. Season 2 hosts Chef Sean Brock from Tennessee and follows him as he travels the south showcasing the incredible history and rich traditions of southern cuisine.

I’m so fascinated by shows like Mind of a Chef because I love learning and growing in my understanding of culinary techniques and also the history of certain dishes. In a couple episodes, Chef Brock mentioned and cooked a very traditional southern breakfast of country ham and red eye gravy. I was so inspired by his attention to detail and respect for his food that I had to try it for myself!

Melon, Prosciutto, Arugula & Honey Bites

Melon prosciutto bitesIt’s summer! yayayayay! I’m a summer girl through and through, so now that it’s summer I’m elated. Although, allergies seem to be particularly bad this year, so that’s an uphill battle for me right now. But as soon as those subside, it’s full speed ahead to summertime glee.

These little bites of joy really help with that summertime happiness! There’s something about melon and prosciutto that just makes my taste buds smile. But I decided to take one of my favorite, refreshing appetizers and step it up a notch by adding arugula and honey to the mix.

Hey y’all! Stephanie here again. Summer is in full swing which means farmers markets are stocked with summer produce and my backyard berry garden is ready to harvest. The previous owners of our house had recently planted strawberry plants when they decided to sell. We closed 3 years ago in May, and it was an amazing gift to move in and find a patch of strawberries almost ready to harvest!

Strawberry Rhubarb Biscuit Bake

The season of spring is upon us and the strawberries in Oregon are overflowing with flavor and sweetness. The rhubarb time is here and what a special time it is. Rhubarb and strawberries go hand in hand not just because of the complimentary sweet-to-sour or their matching color palate but because they ripen at the same time.

Every year I look forward with anticipation to the farmer’s market opening and that big sign that reads Fresh rhubarb sweet local strawberries! It pulls me from my tasks, from my busy, busy days it makes me pull the car over and wander around the market with basket in hand, eyes almost popping out of my head as they bounce from bountiful stand to bountiful stand.

This year I wanted something easy for breakfast with my family on the coast so I whipped up this easy little treat. It is perfect for breakfast, a little snack with tea or for a light dessert and is ready in no time at all. I love serving it in the cast iron pan you cook it in too; it brings that sweet little farmhouse charm right from oven to table. What I love is how quick and delicious this is, no crusts to make and chill then roll out and bake just a little fruit and a little flour and a lot of flavor.
