Broiled Asparagus

I’ve never been a huge fan of asparagus. In fact, if I told my mom that I voluntarily made asparagus, she’d respond with “who are you?!” I was an extremely picky eater as a child but as I’ve gotten older my taste buds have changed so much and I love all of the new foods I am discovering. Asparagus is one of them!

It helps that this recipe is so incredibly easy. I had originally planned on baking the asparagus when my friend recommended broiling it. I wasn’t quite sure how it would turn out but man oh man, it was delicious. The prep time took maybe 5 minutes and the cook time is less than 10 depending on the thickness of the stalks.

Asparagus is one of those side dishes that perfectly accompanies so many meals. This particular asparagus was paired with a goat cheese risotto recipe that I whipped up. But it could go well with salmon, chicken, beef, more veggies, anything! Asparagus has so much natural flavor that you almost don’t need a lot of ingredients to make a great side dish. A drizzle of olive oil, a handful of minced garlic, and generous sea salt and cracked black pepper is really all you need. [Read more…]

Simple Blackberry Crisp

I don’t know about where you live, but spring is officially here in North Carolina. In fact, I’d say it’s almost summer weather with our high 80 degree temperatures this weekend. It was the perfect weather for working in the yard, sipping on sweet tea, and blackberry crisp.

I have always loved all berries, but blackberries have never been my top choice. But after this crisp recipe, I’m a blackberry girl for sure. I’m already thinking of all kinds of ways to use them this summer. Starting with this super easy and delicious blackberry crisp. It’s the perfect blend of sweet with natural tartness from the blackberries.

Crisps have become one of my favorite dishes to bake. They’re so versatile and so easy. Another great part is that their size can be customized really easily. Sometimes I just want to make enough for me and sometimes I need an entire pan filled for a group of friends.

Goat Cheese & Pesto Stuffed Chicken

Happy Tuesday, friends! It’s Madison again from Wetherills Say I Do.

Do you ever try something at a restaurant and know that you have to make it at home sometime? Well that’s how this dish got started in our house. We went to a local restaurant called J.Peppers where I had the most divine meal ever. As you probably guessed, it was a chicken breast stuffed with goat cheese and pesto. Within a week probably, I redid the meal at home. Now it’s become one of our favorites!

We eat chicken a lot in our house and I love how easy it is to dress up chicken by stuffing it with some of your favorite ingredients. The other night I bought some goat cheese for another recipe and knew it would be a perfect weekend dinner to do our favorite stuffed chicken recipe!

Busy Girl’s Bruschetta

We all have those weeks. Ya know, the crazy ones. We won’t go into detail but the bottom line is, even when weeks are crazy and life is out of control, girl’s still gotta eat! And just because it’s busy, doesn’t mean what you’re eating can’t still be deliciously gourmet tasting. 

Now that springtime has finally decided to show up, I am really excited to use fresh produce and there’s nothing better than fresh tomatoes in my book. I’ve had quite a few variations of bruschetta, including a goat cheese and red pepper bruschetta last weekend! But when I want that authentic Italian taste and summer feeling, I go for a very traditional bruschetta recipe.

Bruschetta ingredients are so simple and a lot of the time I have them all already. Sometimes I opt for fresh basil but this time I just used dried basil because I really wanted to hone in on the delicious tomato taste. Therefore I kept the distractions to a minimum.
