I don’t know about where you live, but spring is officially here in North Carolina. In fact, I’d say it’s almost summer weather with our high 80 degree temperatures this weekend. It was the perfect weather for working in the yard, sipping on sweet tea, and blackberry crisp.
I have always loved all berries, but blackberries have never been my top choice. But after this crisp recipe, I’m a blackberry girl for sure. I’m already thinking of all kinds of ways to use them this summer. Starting with this super easy and delicious blackberry crisp. It’s the perfect blend of sweet with natural tartness from the blackberries.
Crisps have become one of my favorite dishes to bake. They’re so versatile and so easy. Another great part is that their size can be customized really easily. Sometimes I just want to make enough for me and sometimes I need an entire pan filled for a group of friends.
This blackberry crisp is the perfect summer dessert because it’s light and fresh. I honestly love it by itself but it would also be perfect with a scoop of vanilla ice cream or some homemade whipped cream. I can’t wait to try customizing this even more but even with these simple ingredients, this crisp truly is perfect for summertime.
Ingredients
- 3 containers of blackberries
- 1/2 c sugar
- 1 tablespoon water
- 4 tablespoons flour
- 1 tablespoon vanilla
- 1 cup quick oats
- 1/2 cup flour
- 1/2 cup brown sugar
- 1/4 cup cold butter, cubed
Instructions
- Crush blackberries (To do this, I put them in a plastic bag and squished them by hand)
- In a saucepan, add crushed blackberries, water, sugar and 4 tablespoons flour.
- Heat to a boil, cook 2 minutes while stirring constantly.
- Remove from heat, stir in vanilla and remaining blackberries. Let cool.
- Combine oats, flour, and brown sugar.
- Cut in cubed butter to make crumb mixture.*You can also use a food processor for this step
- Fill baking dish(es) with blackberry mixture (this should make enough for a 1.5 qt baking dish)
- Top with remaining crumb mixture.
- Bake at 350 for 25 minutes or until top is golden brown and mixture is bubbly
