Zucchini & Squash Goat Cheese Pizza

Pizza is a staple in my house. It is one of our favorite meals. Bread and cheese and toppings. It may be the most perfect food. I recently threw a Farm-to-Table potluck and I wanted to use some beautiful squash and zucchini that I recently found at a farmers market.

This recipe is crazy easy and ridiculously good. With just a few ingredients, you will be surprised at the flavor that this pizza will bring. I decided to use goat cheese because, well, I love goat cheese. I wanted to use a cheese that would compliment the vegetables and not overpower them, but could hold its own with the crust.

You can peel the veggies any way you like. I just used a vegetable peeler and made long ribbons. This recipe is also a fave because of the delicious golden brown garlic that is in each bite. You absolutely can’t go wrong with this recipe. Your family will love you, and you may even convince them that this is a better option than delivery pizza. You can make this garden fresh pizza faster than calling out for pizza, and who doesn’t love that?

Zucchini & Squash Goat Cheese Pizza

Ingredients

  • 1 large farm fresh zucchini (if you need more ribbons, you may need 2)
  • 1 large farm fresh yellow squash
  • packaged pizza dough or phyllo dough
  • 1/2 cup (4 oz.) goat cheese
  • 8-12 garlic cloves
  • 1 tbsp butter or olive oil
  • salt and pepper

Instructions

  1. Saute the garlic cloves on medium heat in the olive oil or butter until golden brown. Add salt and pepper if desired. Remove from pan and set aside.
  2. Pre-heat oven to the directions of the phyllo or pizza dough states.
  3. Roll out the pizza dough and spread on goat cheese and sprinkle on the garlic cloves and salt and pepper.
  4. Weave the zucchini and squash ribbons on top of cheese and garlic.
  5. Bake in the oven as long as the dough direction advises, or until the dough has reached a golden brown.

Busy Girl’s Bruschetta

We all have those weeks. Ya know, the crazy ones. We won’t go into detail but the bottom line is, even when weeks are crazy and life is out of control, girl’s still gotta eat! And just because it’s busy, doesn’t mean what you’re eating can’t still be deliciously gourmet tasting. 

Now that springtime has finally decided to show up, I am really excited to use fresh produce and there’s nothing better than fresh tomatoes in my book. I’ve had quite a few variations of bruschetta, including a goat cheese and red pepper bruschetta last weekend! But when I want that authentic Italian taste and summer feeling, I go for a very traditional bruschetta recipe.

Bruschetta ingredients are so simple and a lot of the time I have them all already. Sometimes I opt for fresh basil but this time I just used dried basil because I really wanted to hone in on the delicious tomato taste. Therefore I kept the distractions to a minimum.

Chocolate Dipped Cream Cheese Mints

It’s been a rough winter; long, cold, painfully wet.  Now my tulips are pushing their way through the dirt, the geese are flying north, and I’m ready for something light and refreshing to snack on.  Enter Cream Cheese Mints.

These are one of my favorite treats.  I’ve always loved mints in any form, especially those little butter mints!  Homemade mints taste so much better.

I like making cream cheese mints because they’re pretty fast to whip together and they taste so good homemade.  The trouble with them, though, is that they have to lay out in the open to dry for a good day or two to dry.  Which is murder on my self-control.

Sometimes I make these mints into long ropes and then cut them into small pieces.  This time, I formed individual flat round discs and used a fork to press a pattern into the top of each mint.

Family get togethers.  Parties.  Bridal showers.  Girls nights.  Wednesdays.

I made them because it was Wednesday.

Biscuits & Sausage Gravy

Hey y’all, its Madison from Wetherills Say I Do!  You can check out some of my older posts on My Cooking Spot here and here. I’d love for you to stop by my blog and check it out. I talk about things like marriage & weddings, recipes and DIY projects I love, and lessons learned in general.
What is your favorite meal of the day? Hands down mine is breakfast. I sometimes have a difficult time with breakfast though, because I don’t really eat eggs. When I was younger they made me sick to my stomach, so I’ve never really developed a taste for them. So when I stumble upon an amazing recipe for breakfast, I cherish it! 
This recipe originally comes from Steven’s dad. I posted a recipe for a Strawberry Jam Loaf from Steven’s aunt earlier, what can I say, I love family recipes! Steven’s dad made this recipe for us a few years ago. Before he made this recipe for us I had never really tried biscuits and gravy before. But man, I’m hooked now. One of the biggest benefits to this recipe is that it makes quite a bit, but sausage gravy freezes incredibly well, so you’re able to have it for a long time.
