Classic Grilled Cheese with Bacon

It is Friday afternoon, and I could really go for a buttery, cheesy grilled cheese. But not just any grilled cheese. I like to add a little bacon. Sometimes I like to add some other items like tomatoes, arugula or even an occasional avocado slice or two.

But not today. Today I just want the creamy cheese on a buttered piece of bread with a few slices of crispy bacon. Sometimes, you just need some bacon.  I also need my sandwich as quickly as possible. I have a craving, and it needs to be satisfied and in my lips N.O.W!

I was surprised to find out that a lot of people are not aware that you can cook some crispy and delish bacon in the microwave in just a few minutes. When I am in a hurry and need some bacon asap, I just throw some pieces in a microwave and they crisp up just perfectly.

To cook the bacon in its microwave perfection, start by placing 2 paper towels over a paper plate. Add a few pieces of bacon on the paper towels. Make sure not to crowd the bacon. Place in the microwave and cook on high for 2 minutes. Check the bacon and turn the bacon over. Cook for another 1 minute on high. Check the bacon, and if it needs more time to crisp up, keep cooking for 30 second intervals and check each time. Every microwave is different, so your cook time may be different. It takes me about four – five minutes to get the best crispness.

In the meantime, you can start on your grilled cheese. Add some butter to a pan and turn to medium heat.  I usually use about 1/2 tbs and let it melt. I also butter the outside o the bread. Place the buttered side of the bread into the hot pan. Place your cheese on each side of the bread, and just for a little more richness and stringy cheese, I add a little shredded cheese. Can’t have too much cheese if you ask me.

Crispy, Crunchy, Kale Chips in Two Flavors – Cheesy & Spicy

Nothing beats the satisfying snap of a chip, the saltiness, the crunch; it’s tantalizing just to think about, and you know what they say, “be careful your thoughts for they become your actions.“  Well, no sooner have you thought about something crunchy then you find yourself devouring a bag of something not-so-good for you.   That is until you have discovered the secret of all secrets, the holy grail of snacking…. the Kale Chip.  Or, as my sister Nathalia Sciotto of Creatively Conscious calls it, “Kale Crack”.  The name is aptly given, for you will quickly become addicted to eating this “oh-so-simple” to make treat.

Now I know what you are thinking, but fear not readers, they are…wait for it…. good for you!  Seriously.  The other fantastic thing about Kale Chips is they have so many possibilities.  You can make them sweet, savory, salty, spicy or cheesy!  I mean listen to this possibility~ Lime Chili Kale Chips…is your mouth watering?  Well it should be!

What makes this one of my favorite recipes to share is that many people have heard the good news of Kale Chips and have bought and devoured them, but those store bought chips, oh dear lord, are they pricey?! It seems strange considering a basic Kale Chip needs only kale, which is pretty darn cheap, olive oil, and salt; but it’s not unheard of to pay eight dollars for five ounces.  What is really insane about that price tag is how simple they are to make.  Let’s all be honest here: everything. I mean EVERYTHING, tastes better when it’s homemade, and this treat is so easy to make, it is just silly to buy it.   Let me put it like this; while you watch a thirty-minute sitcom you could make, bake and be eating these chips!
