Coconut Cilantro Rice

September 11, 2014 By Rachel Cox 1 Comment

yummy coconut cilantro rice! Easy, and delicious!

I adore cilantro. The bold flavor and freshness that it brings to a dish is incredible, and I am all about using fresh herbs as often as I can get my hands on them. I have lately fallen in love with coconut rice, and wanted to combine the two flavors to create a super yummy side dish. So I give you coconut cilantro rice. This side pairs wonderfully with almost any meal but specifically tastes great with Indian, Hawaiian, or Mexican dishes. I think it would pair perfectly with just about anything though because the coconut is not an overwhelming flavor, it is very subtle.

This rice can be on your table in less that 20 minutes and is so creamy you will want to go back for seconds. I am pretty sure I could eat the entire pot of the stuff…it is seriously that yummy! Enjoy!

I’m like you – LOVE, LOVE, LOVE cilantro. My five-year-old can’t stand the smell, though, and throws a temper every time I use it. 🙁
Lately I’ve been avoiding using it which is VERY sad. This recipe might be worth a tantrum… Looks fantastic.
