Coffee is my love language. I spend time with it every morning, and most afternoons…even some evenings. It is a very sweet relationship that I have with coffee. I am just playing, but really and truly I do love some coffee. So I am always trying new ways of enjoying my favorite drink! French Press is my method of choice when it comes to brewing a strong cup of coffee. The pressing creates a smooth but bold flavor, and it eliminates the bitter and acidic aftertaste. I don’t know about you but sometimes I just want to have a cold drink in the afternoon, and iced coffee always hits the spot.
Soba Noodle Chow Mein
As crazy as it sounds, the most comforting food to me is ethnic food. Don’t get me wrong, I love a good cheeseburger hot off the grill or something equally as American on occasion, but 9 times out of 10 if I am feeling tired, sad, or emotional I am craving something from another continent. Last week my husband went out of town for a business trip, and so I was left cooking for just myself. No fun right? Well, I was actually thrilled about it because my husband is not the biggest fan of some of my favorite dishes. So I went to the grocery store, and picked out ingredients that I knew I could never get away with using when my hubby is at home, and off I went.
I made this chow mein to accompany me, my couch, and endless television shows…it was like I was back in college with take out! It was yummy, quick and easy to make, and even better cold the next day! Soba noodles are really great for you as they are made from buckwheat flour, winning!
Healthy Strawberry Mango Frozen Yogurt
I crave ice cream year round. Even on the coldest of days I will sometimes find myself think about my favorite ice cream. For as long as I can remember I have loved strawberry ice cream. I can remember when I was little going to the grocery store with my mom as her “helper”. She would always let me pick out a small little pint container of whatever ice cream I wanted. Every time I reached for the same thing. Not the crazy moose tracks, or candy filled ice creams…no, no, I always picked out homemade vanilla with strawberries by Blue Bell.
Honey Grapefruit Roasted Pears
So it is January, the month of fresh starts and big goals. We all know what it feels like to make the resolution to eat healthy only to toss that aside a few weeks later. It is really hard to stay on top of this goal and really make it a habit. BUT today I made these incredible roasted pears. I am actually eating one right now, and they are so yummy that I keep stopping mid typing to get just one more bite. They are SO. GOOD.
First, pears are in season, so they are plentiful and cheap right now! Score!! Also, this is a super simple, healthy dessert that is impressive and comforting.
