Mardi Gras is here early this year, so it’s time to get celebrating!

King Cakes fly off the shelves starting in January, and purple, green, and gold everything adorn windows, stores, wreaths, and trees. I’ve seen school bands practicing in my neighborhood to get ready for marching the parade route, and I passed floats driving down the interstate with full police escort. Mardi Gras never fails to bring out the fun in the city.

Roasted vegetables are my favorite things on Earth. I could eat roasted vegetables every day, and pretty much every vegetable tastes good roasted. Ok, so not celery but every other one I can think of is delicious.

They’re basically person. Roasted vegetables are simple to make. They taste great, and it’s super easy to eat a lot of vegetables in one sitting since the vegetables cook down so much. Salsa Turkey Lettuce Wraps are an easy, light and refreshing make-ahead lunch that are perfect for summer

This past weekend I spent three glorious days with 3 of my best friends for a girl’s weekend. While we felt sad that some of our other friends couldn’t make it, we had an amazing weekend!

We were in Grayton Beach, and the weather could not have been any more perfect. The sun was brightly shining, the wind was blowing, and the white sandy beaches were hardly crowded.

Every morning, we woke up without alarm clocks, had a leisurely breakfast, took a bike ride, then trekked out to the beach with our chairs, towels, books, ice chest filled with water & adult beverages, and lunch/snacks. [Read more…]
