Finally, it’s gotten colder in Los Angeles! I never felt quite right making hearty stew while it was 75 and sunny outside, but I finally got the chance over this weekend. I remember when I was younger, my Mom would make Cowboy stew. I would come home from school and it was always pitch black by the time I got home because I would have to stay in extended care while waiting for my Mom to pick me up. If it was a particularly cold day, my Mom would make stew in the crockpot and simmer it all day until we got home. We’d sit down with a hot bowl and watch Family Matters. Oh how I love Urkel. Those were the good days!
Our traditional Cowboy Stew had chunks of potatoes in it, but I decided to mash mine up for a buttery mashed potato bowl!
Cowboy Stew with Buttermilk Mashed Potatoes
Ingredients
- 1/4lb pancetta, diced
- 1lb cubed beef stew meat
- 1/4 cup flour
- 1 large onion, diced
- 3 large carrots, chopped
- 2 cups beef broth
- 1/2 cup red wine
- 4 sprigs Thyme
- Salt
- Pepper
- 1lb potatoes, scrubbed, peeled, and chopped
- 6 tbsp butter
- 1/3 cup buttermilk
Directions
- Brown pancetta in a dutch oven.
- Toss beef with flour.
- Add beef and brown on each side.
- Add onions and carrots, sauté for about 5 minutes.
- Pour in wine and beef broth, and add Thyme, simmer until reduced by half.
- Meanwhile, in a separate pot, boil potatoes until tender when pierced with a fork.
- Drain hot potatoes and mash to break up the potatoes.
- Add butter and milk, blend with a hand mixer until you reach desired consistency.
- Season with salt and pepper.
- Top mashed potatoes with Cowboy Stew.

This is the type of stew that really warms you to your bones! It’ll never get to Delaware’s 30 degrees here in LA, but I still get excited every time it gets just a little chilly to make this stew!
