Creamy Cheesy Mushroom Leek Au Gratin Potatoes

With it being close to the holiday’s, it is nice to try some different and unique recipes. I love to cook with cheese. All types, any kind. Give it to me if it has cheese.


I have just discovered a new brand of cheese that has so many different flavors of cheese that I have never heard of, tasted or experienced in my whole life. This is officially going to change now that this company has been introduced in my life.

This glorious company who makes so many interesting cheeses is Great Midwest Cheese. You should first go and check out their website of all the types of cheeses they make in Wisconsin.

For example:

  • Horseradish Cheddar
  • Salsa Jack Cheese
  • Blueberry Cobbler Cheddar
  • Mango Fire Cheddar
  • Morel & Leek Jack Cheese

And so many more

That is the cheese I chose to try in a delicious recipe. I love mushrooms so much and I thought this cheese would be a perfect accompaniment to my cheesy gratin potatoes. I decided to sauté some mushrooms and add the Morel and Leek cheese. The Morel and Leek cheese is a really soft Jack cheese and melts super well. It is also really savory and I thought it would pair perfectly with potatoes. And boy, was I right.

Creamy Cheesy Mushroom Leek Au Gratin Potatoes

Ingredients

  • 3-4 thinly sliced potatoes
  • 1 small onion diced
  • 1 clove garlic, minced
  • 2 Tbs flour
  • 3 Tbs butter
  • 1 1/4 c. milk
  • 1 cup shredded Morel & Leek Jack cheese
  • 1 package sliced mushrooms
  • 1 Tbs Olive oil
  • 2 Tbs vegetable stock (or chicken or beef)
  • Salt and pepper

Instructions

  1. Pre-heat oven to 350 degrees. In a large skillet, add 1 Tbs butter and olive oil. Add mushrooms, broth, salt and pepper. Cook until mushrooms are cooked. In a separate skillet, saute onion and garlic in 2 of the 3 Tbs butter until tender. Stir in flour. Add milk and cook until boiling while stirring. Add cheese and cooked mushrooms. In a casserole dish, layer 1/2 of potatoes. Cover with 1/2 cheese sauce. Repeat. Cook 1 hour.
