I am in the thick of the summer here in Phoenix. We technically have at least three more months of mega hot days. So I am constantly looking for lunch ideas that I can make quick, easy, perfect for a hot day. I hate going out in the day just to get something to eat when it is so hot out.
So, I have been making some salads and sandwiches at home. I have been craving some burritos lately, but then I thought I should just make a burrito bowl. I can have my salad and burrito in one bowl.
But here is what has been holding me back. I have struggled to make a good rice. I really want a good cilantro rice. But I can never get it right.
But now, that has all changed. In fact my world has been turned upside down in the kitchen in the best way. Pop and Cook is my new best friend in the kitchen.
Herbs already chopped up in individual pockets and ready to cook with. Oh.My.Gosh! This will change everything! I love that I can make cilantro rice in a cinch and I have Pop & Cook to thank.
It couldn’t be easier. I make my rice as usual. While it is still hot, I added my cilantro that I popped out of my package and stirred them in. The cilantro coated each grain perfectly. There is no way I could have done this any better. I would have had to make a cilantro puree to get this result. Pop & Go picks their herbs at the peak of ripeness and freezes them right away. They are genius to have each herb in individual pods that are perfect for cooking. Pop in what you need for your recipe and put the rest back in the freezer.
I also bought the garlic pods because I use garlic a few times a week in my cooking. I can’t tell you how much of a love/hate relationship I have with garlic. I love, love, love to eat it. I hate, hate, hate to cook with it. Chopping it is such a pain. Taking it out of the wrapper (so-to-speak) chopping it and then having my fingers smell like garlic for at least 1 day. I wash and wash and use the silver spoon trick to no avail.
I will be buying Pop & Cook herbs every week. Especially the garlic. Pop it in the pan and since it is crushed garlic, it just melts with the butter. Ooooh, it is just so lovely. My husband even said that we should spread it on some crusty bread with some butter for some legit garlic bread. Yum!
Anyhow, they have a ton of different herbs that you can pop in to any of your recipes. I will be trying them all and I am sure they will all end up as staples in my kitchen.
- Cilantro
- Garlic
- Ginger
- Basil
- Sautéed glazed onions
Ingredients
- 1/2 cup basmati rice
- 3 cilantro Pop and Cook pods
- 1 cup water
- pinch salt
- 1 tsp (or more if preferred) fresh lime juice
Instructions
- Bring your water to boil. Add rice and bring to simmer. Cover and cook for 15-20 minutes until water is absorbed. Once rice is cooked, add three cilantro pods and mix into rice until combined. Add salt and lemon. Serve in your burrito bowl with your fave toppings.
