Easy Paleo Crock Pot Chicken

My husband and I were recently given 28 days to move 1200 miles away . . . 28 days to find a house 1200 miles away, pack our current house, sell our current house, and then get our things to the new house 1200 miles away. I refused to live off fast food, especially since just 3 days before we accepted this challenge I had decided to do a whole 30. I know I’m a little crazy, and no, it didn’t go exactly as planned. But here’s a recipe that helped save time, stress, and me from the drive thru.

It’s very easy to change the taste of a roasted chicken. I’m going with simple, using oregano and chili powder. You could just as easy swap the oregano for basil and the chili powder for red chili pepper flakes—serve it with roasted spaghetti squash with some pesto! Or just rub taco spices and salsa all over it . . . . Anyway, here’s what I used today:

2 tsp kosher salt
1 tsp garlic powder
1 tsp onion powder
1 tsp dried oregano
¼ tsp ancho chili powder
½ tsp white pepper
½ tsp paprika

 As always I like to share my favorite part of any recipe. This one is how many meals we can get from just one chicken. 6 just from this one chicken. Talk about stress free . . .

Easy Paleo Crock Pot Chicken

Ingredients

  • A whole chicken
  • Extra-virgin olive oil
  • An onion
  • your choice of spices

Instructions

  1. Blend your spices together.
  2. Grab a small onion or half of a large one and the chicken, plus some cooking twine. 
  3. Prep your chicken (e.g. pull out the guts, rinse and pat dry, tuck the wing tips back)
  4. peel the onion and cut into two or three chunks.
  5. Stuff the onion in the center cavity of the bird and tie the drumsticks off with twine.
  6. Rub your spices all over the chicken
  7. Cook on low for 4-5 hours
  8.  
  9. Before dropping the chicken in the pot, make a couple balls from the aluminum foil and put those in first. This creates a platform for the chicken to rest on, letting the juices drip below. Now, it won’t be a soggy mess.
  10. Lay the chicken atop the foil balls {*Edit: roasting rack} and drizzle with a bit of olive oil, rub it over the skin. Now take your spice blend and cover the bird entirely. I like to do this after placing the chicken in the crock so the spices that go overboard end up in the juice and not on my counter.
