Butternut squash is a great way to add a little Fall flavor to your dinner! This easy chicken and rice casserole is simple to throw together on the busiest night.

Hey everyone! It’s Jenna from A Savory Feast here to share another recipe with you. If you love Fall comfort foods, you’ve got to try this Fall Chicken & Rice Casserole. It’s packed with healthy ingredients like butternut squash, asparagus and onions, all mixed in with savory chicken and rice.

Fall Casserole Ingredients

This Fall I’ve been noticing a lot of butternut squash recipes going around Pinterest. I’ve been itching to try a few recipes myself! I picked a butternut squash up at the store and knew it would be the perfect thing to add to a Fall casserole.

This recipe is great for an easy weeknight meal. It doesn’t take long to throw together, and you’ll probably have plenty of leftovers to enjoy the next day.

Fall Chicken and Rice Casserole Recipe

This casserole would be really easy to customize based on your tastes and what ingredients you have in the house. You could switch out the asparagus for broccoli or add some cheese. It’s up to you!

I added extra flavor to this dish by cooking the rice in chicken broth instead of water. It tastes sooooo good!

Fall Chicken & Rice Casserole

Ingredients

  • 1 cup rice
  • 2 cups plus 1/2 cup chicken broth
  • 1 cup butternut squash, peeled and cubed
  • 1/2 cup asparagus, cut in 1-inch pieces
  • 1/2 cup onion, diced
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • Salt and pepper to season

Instructions

  1. Preheat oven to 350 F.
  2. Cook the rice according to the directions on the package, but use 2 cups of chicken broth instead of water.
  3. Spray a casserole dish with cooking spray. Combine the rice, the remaining 1/2 cup chicken broth, asparagus, onion, chicken, salt and pepper in the casserole dish and stir until everything is evenly distributed.
  4. Bake for 30-45 minutes or until the chicken is cooked thoroughly and the butternut squash is tender when poked with a fork.

    This chicken looks so beautifully succulent and flavourful, and coriander and lime is such a great flavour combination. Love your suggestion for turning this into a salad to. Yum!
