Homemade Blueberry Apple Fruit Leather

June 23, 2015 By Natasha Red Leave a Comment

Now that my little girl is a toddler, I’ve gotten really into creating fun and healthy treats for her. As a mom who loves healthy food, I’m trying to teach my daughter to enjoy a treat that is both enjoyable and nutritious for her.

It brings me so much joy to create fun food that she enjoys…from  gummy snacks, to smoothies, to fruit leather. She gobbles up this slightly tangy, sweet and chewy homemade fruit leather.

Think the old school fruit roll-ups you used to snack on as a kid, but so much healthier. I wrap these up in parchment paper and keep them in plastic baggies for quick snacks throughout the week.

Of course the spices are optional, but I think it gives the fruit leather a little something extra.

Ingredients

  • 1 cup unsweetened apple sauce
  • 1 cup (6 ounce package) blueberries
  • 1/2 cup water
  • 2 teaspoons honey
  • 1/8 teaspoon ground coriander
  • pinch of nutmeg

Instructions

  1. Pour apple sauce, blueberries and water in a sauce pan and bring to a simmer.
  2. Simmer over medium heat for 10 minutes, until all the blueberries are softened.
  3. Take off heat and add honey, coriander and nutmeg.
  4. Pour fruit into a blender until smooth. Taste the purée and adjust honey or spices depending on how tart your blueberries were.
  5. Preheat oven to 170 degrees f.
  6. Line a rimmed baking sheet with parchment paper. Pour the purée into the lined baking sheet.
  7. Bake for 8-11 hours.
