School has finally started.
Judging from the pictures on Facebook and Instagram, we must be the last school in the universe to start. Don’t get me wrong, I love my kids, and my summers with them, but I’m always ready to get back to the routine and structure of the school year.
It means I have to pack lunches and make after school snacks, but it’s totally worth it. Especially when the snack is this Honey-Butter Popcorn!
I’m very big on after school snacks. It’s partly because my kids are super skinny, and feeding their racing metabolisms is a full-time job, but it’s mostly because I want them to sit still, in the same room as me, and download about their school day.
It seems like it’s easier to get them talking about school if A) we do the talking directly after school, and B) it’s low-key, no-pressure. The after-school snack totally accomplishes that.
Last year, after speaking to a friend of mine who is a Family Therapist and regularly works with troubled kids, I wrote a post about Why I Make My Kids Eat After-School Snacks. I included links to his articles about protecting kids from drugs, and links to some good snack ideas that keep kids in the same room as me for at least 5 minutes.
I might have to write a follow up list, and include this popcorn! If you serve it in one big bowl, kids are stuck sitting at the table sharing. It’s a sneaky trick, but it works.
I totally stole the idea for this popcorn from FauxMartha. What can I say? It was a really fantastic idea! I thought about throwing in some sliced almonds, but honestly, I had my hands in the popcorn too soon, and just loved it plain!
Whoever thought up honey butter was a genius.
Ingredients
- 1/2 cup unpopped popcorn kernels
- 4 tablespoons butter
- 1/4 cup honey
Instructions
- Pop corn. Place in a large bowl, set aside.
- In a small saucepan, melt butter and honey together over medium-high heat. Bring to a boil, and remove from heat. Quickly pour over popcorn, and use a large wooden spoon to stir popcorn, until coated.
- Let cool a few minutes before eating.
