Roasted Parmesan Potato Wedges

Making your own delicious potato wedges is so easy! It is one of those recipes you can throw everything in a bowl and just let your spoon do the work.

For these Roasted Parmesan Red Potato Wedges you will need:

  • 6 good sized red potatoes
  • 1 clove of garlic minced
  • pinch of black pepper
  • 1 tsp coarse sea salt
  • fresh rosemary
  • 1/2 cup extra virgin olive oil
  • 1 tbs bread crumbs
  • 1 tbs parmesan

Once you have preheated your oven to 425 degrees:

1) Wash your red potatoes and remove any blemishes

2) Cut into wedges

3) Place all of your wedges in a mixing bowl, along with all of the ingredients. When adding your rosemary, carefully remove the rosemary from the stem and add to the bowl.

4) Mix well

5) Line a cookie sheet with a piece of foil, and pinch the corners up together, making the sides of the foil come up and form a barrier to prevent olive oil from dripping out.

6) Bake for 20-25 minutes (depending on how big you made your wedges)

Enjoy your yummy potatoes! These are so good, even my kids like them.

With three daughters Stephanie spends a great amount of time crafting, playing and making messes all around the house. Collecting vintage kitchen items, learning photography and her addiction to fabric are a few things that eat up her spare time and spending money, but overall, she is all about enjoying life on a budget and being as crafty as we can be in our home. Stephanie loves dessert, the color yellow and Italian food the best!
