Simple Grilled Shrimp Kabobs

  The one bad thing about cooking for your friends is spending all that time in the kitchen while you could be out laughing and spending time with them. Ok, cleaning up is all that great either, but it’s worth it to spend time with friends. So when friends are over in the summer months, I like to come up with easy grill recipes. It’s the perfect balance. All the prep work is done before everyone arrives. And while the main dish is cooking, everyone can be outside – beer in hand – talking and laughing together. Here’s an easy recipe you can switch out ingredients to make even your pickiest friends happy.

It’s very simple to make these to your liking. You can use shrimp, chicken, steak, zucchini, squash, potatoes, sweet potatoes, corn, pineapples, onions, all peppers, tomatoes, mushrooms, etc., etc. And any mix of the meat and vegetables you prefer. If you’re on an Atkins diet or paleo diet – I’m pretty sure the marinade even works for Whole30! – just leave out certain vegetables for each diet.

Simple Grilled Shrimp Kabobs

Ingredients

  • 2 lbs of your preferred meat
  • 4 cups of your preferred vegetables
  • - for this recipe we used 1 cup mushrooms, 1 green pepper, 1 small onion, 3 medium sized Zucchini, and 1 cup pineapple
  • marinade:
  • 1 cup balsamic vinegar
  • 1 cup olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon garlic powder

Instructions

  1. Dice or cube your meat into bite sized pieces, if needed
  2. combine all ingredients for marinade and mix well
  3. at least 30 minutes before grilling and up to the night before - place meat into marinade
  4. while the meat marinades, dice/cube all vegetables into bite sized pieces as needed
  5. place all meat and vegetables onto skewers and grill for 5 minutes on each of the 4 sides or until completely cooked through.
