Honeycrisp Winter Salad with Citrus Poppyseed Dressing

February 3, 2017 By Laurensrecipes Leave a Comment

A simple yet delicious spinach salad with honey crisp apples, mandarin oranges, chopped pecans, dried cranberries, all topped with a homemade citrus poppyseed dressing.

Hi all! It’s Lauren back from Lauren’s Recipe Box ready to share with you one of my favorite salads of all time! I don’t know about you, but Winter is one of the hardest times for me to stick to a healthy diet. Maybe it is the cold weather, holidays, or maybe it is just an excuse to be bad 🙂 Either way, I am trying to make some healthier choices this month and this honey crisp winter salad is the perfect start! A bed of baby spinach loaded with thinly sliced honey crisp apples, mandarin oranges, chopped pecans, dried cranberries, and the BEST citrus poppyseed dressing… This salad will make you forget all about those Chick-fil-a waffle fries 😉

Your eyes do not deceive you. Those are indeed Sweet Potato Nachos you’re seeing.

No. I’m not crazy. I know it’s not Thanksgiving, and you didn’t miss out on seven months of life, either.

I may or may not have bought a few too many sweet potatoes in preparation for Easter dinner last weekend, so…I present you with this brainchild! A sort of new take on a loaded sweet potato, but one you can enjoy even in the beginning of spring without feeling like autumn leaves and Christmas shopping are bearing down on you!

Chocolate Pecan Footballs - My Cooking Spot-1

Hey y’all! Stephanie from Sustaining the Powers here again today.  As some of you know, I live in Denver, Colorado which is the home of the Denver Broncos Football Team. After a crazy season of our primary quarterback being out of play for 7 games, we rallied to win the AFC championship and are headed to the “Big Game” next week!! I think we will have our work cut out for us against Carolina, but hopefully the Broncos will come away from that game having played our best and winning the title. (Sorry if you’re a Carolina fan!) Creamy Pecan Brussels Sprouts

These cooler days definitely call for comfort foods, and what better way to say comfort food than a little heavy cream? 😉 I love that when I add it to anything, the dish immediately becomes that much more decadent. This dish is so savory and delicious, I couldn’t stop sneaking bites while it was cooking and after before serving it to my family!

We have used this as a warm side salad, and even topped a pizza with it along with some sliced up sausages and cheese. I happen to think it would make an excellent side to your holiday dinners as well! Who’s excited about Thanksgiving?!
