Happy National Acorn Squash Day – Cinnamon Hazelnut

September 7th is national Acorn Squash day. Who knew? I assume that means that it is the beginning of squash season and to me, that means the beginning of fall. I love fall, and I am so excited that it is almost here, I say almost, because I am in Phoenix, and it is still quite a bit hot in these parts.

This acorn squash recipe is the epitome of fall, and even the holiday’s really. It makes me feel all warm and cozy inside just thinking about it. This recipe is so easy and crazy good. If you get a chance to pick up some acorn squash, you should definitely try it. It is not too difficult either. Most of the time is the roasting. But once you taste it, it is literally melt in your mouth, buttery, sweet, crunchy goodness.

Baked Onion Rings

Oh, onion rings, how I love thee!Though, I never order them! In fact, I couldn’t even tell you the last time I had onion rings! I got a wicked craving for them last week and I just had to have them, but of course, I wanted them without all of the calories and fat. Frying them was out of the question. Time to bake ’em up!
I was a little worried about getting these to brown so depending on your oven, you may want to bake them a little longer. Even though they didn’t get as golden all the way around like I wanted them to, I still found them to be perfectly crispy! I dipped mine in sriracha mayo (which makes them even more yummy, by the way!) I would take this baked version any day over the fried version!

Homemade Fried Okra

Growing up in Texas, my childhood included a lot of delicious food. My mom, who was born and raised in Fort Worth, knew how to cook it all, and my love for fried okra started young.

Recently, my family and I visited a local farm selling fresh okra, so I brought it home and had to fry it up right away! The great thing about frying okra, is that you can adjust the recipe in many ways and change up the flavors whenever you feel like it.

Don’t want to use white flour?…try wheat!

Want to try frying in coconut oil?…You can!

Leave out or add other breading ingredients and make it just the way you want.

Oven Roasted Fresh Summer Corn

Sweet, delicious, finger-lickin’ corn. There is nothing like it in the summer. At street fairs or carnivals, it is one of my favorite treats. However, as much as I love corn, I am not a master griller (yet) but I like to enjoy the sweetness of a roasted corn with some salt and pepper.

This is such an easy recipe, you will be roasting corn all year long. Yes, even in the winter you can enjoy the flavors of summer.
