Four Ingredient Maque Choux

I love easy meals. After working a long day of work, I want an easy meal that still tastes delicious. So I look for simple and delicious meals. My mother in law made this recipe for us a while back and it’s become a staple in our house.

At first, I wasn’t sure if it was a made up recipe or an actual thing people make. Apparently it’s a thing! We just make it more simple than most recipes call for, but I prefer it that way. Simple ingredients, quick cook time and so so tasty, y’all!

This is a simple side dish that goes perfectly with tons of dishes! You can dress it up or keep it simple, but either way it’s delicious! We love having this especially with grilled chicken!

Four Ingredient Maque Choux

Ingredients

  • 3 strips of bacon, cooked and chopped into bits (grease reserved)
  • 2 bell peppers, diced
  • 1/2 onion diced
  • 1 can of sweet corn, drained

Instructions

  1. Cook bacon until crispy in frying pan.
  2. Meanwhile, dice onions and bell peppers.
  3. Remove bacon strips from pan, reserving grease.
  4. Add onions and peppers to pan, cook for a few minutes until onions begin to be translucent.
  5. Once onions are translucent, add in corn
  6. Cook for an additional 2-3 minutes or until peppers are cooked through
  7. Serve immediately

When you add bacon to anything, it’s going to be good. So when you cook veggies in bacon, it’s definitely good. It adds such a depth of flavor to this side dish.
