This Ginger Beef Soup tastes delicious, is easy to make, and can help you feel better after just one bowl!
If you are someone that has allergies, then I am truly sorry. How have you lived so long that way?! Seasonal allergies are terrible!
This year was the first time in my life that I had seasonal allergies and oh dear me is it miz.
Truth be told, I am a little dramatic… But how boring would my posts be if I didn’t blow things out of proportion exaggerate, right?! A rotten avocado isn’t funny but when I talk about it for an entire post about how horrific it was, then it’s totally good… I seriously need to rethink my post topics… ideas welcome.
Let’s get back to the important stuff: me my allergies this soup.
Oh wait, let me introduce you to this soup. It’s incredibly perfect when you aren’t feeling well, whether that be a stomach ache, a cold, recovering from something, or just feeling not feeling your best.
It helps soothe any tummy troubles {thanks to the ginger}, has a kick to it so it helps you breathe again, and it’s packed with nutrients from all the veggies, glorious bone broth, and powerful protein.
It’s not very hard to make either, so even if you have medicine-induced/lack-of-high-quaility-sleep brain fog, you can make this soup.
If you’re looking for me, you’ll find me in my apartment, with my Zyrtec, Flonase, tissues, watching Netflix all afternoon while drinking tea and eating bowls upon bowls of this soup.
Ingredients
- 1 TBSP coconut oil
- 1 pound beef stew meat
- 1 onion, sliced
- 1/2 pound carrots, sliced
- 1 red bell pepper, sliced
- 8 ounce mushroom, sliced
- 1 jalapeño, minced
- 1 TBSP ginger, minced
- 1 TBSP garlic, minced
- 4 cups beef broth
- 4 cup water
- 1 tsp fish sauce
- limes for serving
Instructions
- Heat coconut oil in a stock pot over medium-high heat. Add beef stew meat, and cook until meat is browned on all edges. Remove and set aside.
- Turn heat down to medium and add onions, carrots, and bell peppers. Sauté for 5-10 minutes until lightly golden in color. Add mushrooms and sauté until they release their juices, about 7 minutes. Stir in jalapeño, ginger, and garlic. Sauté for 2 minutes until fragrant.
- Pour in beef broth and water, and add reserved beef and any juices that have accumulated. Bring to a boil and reduce heat to a simmer. Simmer for 35-40 minutes until beef and veggies are tender. Stir in fish sauce if using. Taste and add salt, pepper, fish sauce, and/or lime juice if needed.
