A Tapas date night is what is was. A nice date with the hubs and all planned in the backyard. This recipe was one of my favorites. In fact, my brother came over and couldn’t stop eating the leftovers of this. He could not believe the flavors and said he would have never thought of a recipe like this.
The red wine onions with the goat cheese go together in harmony. The creaminess of the goat cheese is a perfect bite with the sweetness and richness of the onions.
Caramelizing onions can be seen as an art, but it shouldn’t be intimidating. It does take some time and patience, but it is totally worth it. If you love red wine, and goat cheese, I highly recommend you make this recipe as soon as humanly possible. This recipe will be a hit when entertaining, or for just a romantic date night at home.

Ingredients
- 2 small red onions
- 2 tbs olive oil
- 1 1/2 cup Pinot Noir
- Crostini bread
- 2 Cloves Garlic
- Goat cheese
- Salt and pepper to taste
Instructions
- Heat the olive oil in the pan and add the sliced onions and coat with oil. Cook over low heat until onions are softened.
- Add ½ the red wine and deglaze the pan, allowing all the liquid to cook off.
- Season the onions with salt and pepper.
- Add the remainder of the wine and cook until all liquid has evaporated and onions are caramelized. This process takes about 30 - 40 minutes.
- Roast garlic. You can do this in a sauté pan, or in the oven. Brown in sauté pan with olive oil, or place in oven with olive oil and roast until browned.
- Smash garlic until a paste and add to goat cheese. Mix until combined.
- Cut crostini bread into slices. Add onions and top with spoonful goat cheese.
