Natasha here! If you follow my blog at all, you know that I love eating seasonally. It’s something I have been growing in the more I learn about food. It’s hard to tell what’s in season when shopping at the local grocery stores, so I like to do a little internet research to find out or pop by our Saturday Farmer’s Market in town to see what’s out!
Spinach is definitely in season right now, and spring and summer are the perfect time of year for refreshing and simple salads. I was searching for a side dish to pair with a new meal I was making last week and this salad just came to mind! It’s light, fresh and takes all but 5 minutes to throw together.
For an extra kick of sweetness, throw in some blueberries or dried cranberries. Or switch out your lemon for a lime to see how the citrus pairs with a Mexican meal. Play around with the flavors of this slaw and have fun!
Ingredients
- 2 gala apples
- 2 cups spinach
- 1/4 cup mayonnaise
- 1 lemon
- 1 teaspoon honey
- 1/4 cup walnut pieces
- salt and pepper to taste
Instructions
- Core and dice up apples into small pieces and throw them into a medium sized mixing bowl. Slice spinach very thinly so it resembles being shredded. You want the spinach to look like small ribbons.
- Add mayonnaise, the juice of one lemon and honey and stir it all together until evenly coated.
- Add walnuts, salt and pepper and toss around again to combine.
- Serve immediately and enjoy!
