Honey Jalapeño Cornbread Muffins

As someone who was born and raised in the South, I know cornbread is a big deal.

However, until a year ago, I always made cornbread from a pre-made mix because I didn’t want to mess it up. But one fateful day, we were hosting friends and family for our traditional New Year’s Day gumbo celebration… and I forgot to grab a few boxes of the mix from the store.

I scrambled, scouring my cookbooks an hour before the party, and decided upon a random cornbread recipe. And it was pretty darn good!

So I’ve been experimenting with cornbread ever since, and these gorgeous Honey Jalapeño Cornbread Muffins are one of my favorite tries to-date! The honey and jalapeño balance one another out so well, adding a little sweetness and a little spice to the muffins.

This winter has been weird in Texas. Instead of consistent temperatures, ours have been waffling between the 80’s one day to the 20’s the next and everywhere in between.

It’s obnoxious, really, and I wish it would make up its mind, one way or the other.

In what seems like a blink, the weather has gone from brown and autumn-y to cold and white and generally blah for most of the northern hemisphere. This Arctic Chill whatever the weatherman keeps talking about is for the birds. Why does it have to be so cold?!

Aw, who am I kidding, I live in Florida. It’s barely touched us. But I truly do feel for all of you northern folks and I sincerely hope the cold is tolerable, and isn’t messing with your holiday season. Whipped cream is one of those toppings that can go with anything and make everything taste better.

It’s perfect on top of a slice of key lime pie or a cup of chocolate mousse. My husband loves it on top of a banana split, I love it on top of my Banana Cream Pie Smoothie, but it’s also simple enough to eat with a bowl full of juicy strawberries. [Read more…]
