Quick Pickled Vegetables

Thank goodness for my friends. Really and truly, I get so much inspiration for my blog Marcella Rose’s from the fantastic meals and moments I spend with my girlfriends. It’s been hard for me since I moved away from New York and the strong group of fabulous women that I was lucky enough to call my friends.

The older I get the harder, it is to find true friends. I am a bit of a quirky girl so for me that instant shock of connection when I meet, as Anne of Green Gables would say a, “Bosom Buddy” or a “Kindred Spirit”, is a rare thing. I have been on the search since I arrived in Southern Oregon and then it happened. I found her, a girl with style, class, and she can cook too! It’s like magic to find someone who is not only hilarious, but also has similar interests.

Kale and I have a history of misunderstandings.

In fact, it wasn’t until we moved to Dallas that I cooked kale at home. I’d tried kale at restaurants, and it wasn’t my favorite, so I never attempted to make it on my own… and then we joined a CSA.

With our CSA that fall and winter, we received bunches upon bunches of collards, mustard greens and kale. I, obviously, had no idea what to do with them, but that quickly changed since we had so many that needed to be consumed.

It can be really stressful and cause many people to throw their hands in the air and surrender their healthy habits. Eating out, tossing back a few extra cocktails, and skipping workouts are the norm in December. But they don’t have to be!

Sweet and Savory Salmon

During the winter my husband and I love to eat our fill of stews and soups. Made with homemade bone broth to keep us healthy and because a warm bowl of stew is just so comforting to eat alongside a fire on a chilly winter night. We like to mix in some lighter meals to balance it out and this week I was craving the lightness of a salad. We baked this salmon, flaked it with a fork and mixed it in with some greens, cherry tomatoes, blueberries and homemade vinaigrette. A super simple dinner that we absolutely savored.
