Summer Caprese Pasta Salad

I’m not a fan of mayo so I’ve always been one to miss out on summer side dishes like pasta salad and potato salad. It’s just one of those things I’ve come to accept and don’t worry too much about anymore. But, the other day my husband and I were out to lunch and he ordered a caprese pasta salad. Y’all have to understand that anything with mozzarella and tomatoes is my default choice at a restaurant. So I knew I had to try it. Luckily this particular blend was made without mayo and after only one bite I knew I had to recreate it and see if I could make a pasta salad dish I’d actually enjoy!


Pasta salad is so easy to make, which is why it’s a summer time classic. Especially in the summer when you may not feel like slaving over a hot stove for a few hours to come up with a dish, pasta salad is always a good choice.

Ever since living in Italy for four months, I can’t get enough of fresh mozzarella, even if it’s not quite the same here. But there’s nothing like adding some fresh mozzarella to a dish to add texture and flavor.

This recipe is the perfect combo of easy to make, pretty to serve and delicious to eat, which makes it a great contender for any get together. Summer is on it’s way out (unless you live in Florida or Arizona) so be sure to make this recipe before the summer get togethers come to and end for the season.

Summer Caprese Pasta Salad

Ingredients

  • 1 cup of pasta
  • 2 tablespoons of olive oil
  • 1 tomato, diced
  • 8 oz of fresh mozzarella cheese
  • 2 tablespoons chopped basil
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package directions. Drain and set aside to cool.
  2. Cut tomatoes into small diced pieces and repeat with mozzarella
  3. Toss pasta in olive oil and basil.
  4. Add in tomatoes and mozzarella. Toss to combine.
  5. Add salt and pepper to taste.
  6. Serve chilled
