I don’t know if y’all are anything like me… but if you are, chances are, you love Thanksgiving leftovers.
In past years, I’ve made sandwiches and individual turkey pot pies.
This year, I wanted to put a different spin on it. And the inspiration came from my husband, who remarked one morning, “You know, it’s funny. Our pantry and diets reflect our move to Texas.”
And it’s shockingly true. You will always find fresh tortillas in our fridge. We keep ingredients for guac on hand… and chances are, we’ve got locally made salsa in the fridge, too, and tortilla chips ready to go at the drop of a hat. You’ll also find black beans and refried beans in our pantry and us cooking with both regularly And we eat fajitas and/or tacos at least once a week.
So this year? This year, I present Thanksgiving Tacos.
These tacos are shockingly easy to put together… and they’re quite delicious.
Another bonus? You can add whatever Thanksgiving leftovers you’d like to these, so whatever sounds good to you in the moment? Make it happen!
Here’s what I did for mine… but feel free to get creative with it and add YOUR favorite leftovers to the mix:
Ingredients
- 2 flour tortillas, warmed
- 1 tablespoon cranberry chutney (or cranberry sauce)
- 1/2 cup turkey (or turducken, in my case)
- 1/4 cup stuffing
- 1 liberal drizzle of gravy
Instructions
- Warm the tortillas and heat the leftovers that need heating in the microwave.
- Assemble your tacos: Smear the cranberry chutney on the warmed tortillas, then top with the turkey. Place the stuffing carefully on top of the turkey, then top with a drizzle of gravy.
- Enjoy warm!
