I am in LOVE with this pudding!
Chocolate pudding has always been one of my go-to comfort foods. It’s rich and creamy and a perfect ending to lovely dinner.
It’s also great as a mid-day snack for my little one. But these days, we are all gluten-free & cow dairy-free so pudding has been removed from our home….UNTIL NOW!
So, I started with avocado as it’s packed full of good fats which makes it really creamy. Then I added in some banana and chocolate cashew milk for more creaminess and moisture. Next came the chocolate, plus a little vanilla extract, cinnamon, stevia and sea salt and … VIOLA! A healthy version of my childhood favorite chocolate pudding.
Top with some delicious coconut whipped cream and you got yourself a healthy treat for the whole family!
Ingredients
- 2 ripe Hass avocados
- 1 ripe banana
- 1/3 cup chocolate cashew milk
- 1/2 cup dark cacao powder
- 1/4 cup Enjoy Life chocolate chips (dairy, nut & soy free)
- 2-4 PureVia stevia packets, to taste
- 2 teaspoons vanilla extract
- 1 teaspoon cinnamon
- Dollop of coconut whipped cream, optional garnish
Instructions
- Scoop out avocado and place in blender with all ingredients, except whipped cream.
- Mix well and spoon into individual serving bowls.
- Cover with plastic wrap, pressing it all the way down on the top of the pudding so no film develops.
- Place in refrigerator for at least 4 hours.
- When ready to serve, remove plastic wrap and top with a dollop of coconut whipped cream.
