I think it’s safe to say that spring has officially sprung.
Because of this, I’m on the hunt for all kinds of fruits and vegetables.
As the days get longer and warmer, I find myself craving more whole foods, especially those of the vegetable variety. And since we’ve got a newborn at home, I’m on the lookout for simple recipes to make in a flash since I don’t have as much time on my hands for cooking these days.
This Lemon Garlic Roasted Broccoli recipe was a hail Mary a few weeks ago. We were grilling steaks — my first in ten months — and we needed a quick side dish because the steaks were almost done, and we wanted something green on our plates.
We had broccoli in the fridge, so my mom and I chopped it up, threw it in a baking dish, made a quick lemon dressing to top it with and popped it in the oven for 20 minutes.
The end result was fabulous. Fresh, lemony, delicious and yet it was oh-so-simple to pull together quickly.
Here’s how you can make it in your own home:
Ingredients
- 1 head broccoli, chopped
- 3 tablespoons lemon juice, freshly squeezed
- 3 tablespoons extra virgin olive oil
- 4 garlic cloves, minced
- Kosher salt and freshly ground black pepper, to taste
Instructions
- Preheat the oven to 425°F. Spray a small baking dish with cooking spray.
- Place the chopped broccoli in the baking dish, and set aside.
- In a small bowl, combine the lemon juice, olive oil, minced garlic, salt and pepper.
- Pour the dressing over the broccoli.
- Transfer the baking dish to the oven, baking uncovered for 15-20 minutes, or until the broccoli is tender.
- Serve warm, and enjoy.
