About a year ago, my life changed. I went on a girls weekend to Chicago to visit some of my best friends. where there is a girls weekend, you can guarantee there will be a LOT of food. My friend Melissa brought some goodies, including CHOCOLATE COVERED POTATO CHIPS. at first I was unsure…but after tasting them, I realized life would never be the same. Um, wow. They were so so good. Who knew?!
It seemed like all of a sudden, everyone knew what I knew. Chocolate covered potato chips were the perfect treat. Trader Joe’s started selling them and I saw recipes all over pinterest. People had caught on to the goodness. Sweet and salty, what could be better? This week, I found something better. Loaded sweet potato chips? Yes, please!!!
I have always loved sweet potatoes, and baked sweet potatoes with cinnamon sugar and marshmallows are one of my very favorite things. At Thanksgiving, my favorite side has always been the sweet potato casserole. I love how the flavors just feel like home. Loaded sweet potato chips are a little slice of heaven, and your friends and family are sure to love them!
These are so fun and cute, your favorite side dish in dessert chip form. Dipped in white chocolate mixed with cinnamon baking chips, they taste cozy, sweet, salty, and delicious. These are my new favorite fun and easy treat.
I topped the sweet potato chips with chopped mini marshmallows and pecan pieces. All the flavors blended so well, they taste great with one, or all of the toppings. I chose to use salted sweet potato chips, but they also can be found with no salt added. I tried both and preferred the dash of salt, but that’s a personal preference. There are so many great options out there, use your favorite type!
I hope these can hold you over until next thanksgiving when every household will be bursting at the seams with sweet potato casseroles and other delicious varieties. I hope you love these as much as we did! Enjoy!
Ingredients:
- 4 ounces baking white chocolate
- 1 cup cinnamon baking chips
- 1/2 cup chopped mini marshmallows
- 1/2 cup chopped walnut pieces
- 1 bag salted sweet potato chips
Directions:
- Line a baking sheet with baking parchment and set aside
- Melt the white chocolate and cinnamon baking chips in a microwave safe bowl for 1 minute and stir. continue cooking for another 30 seconds or until fully melted. watch closely because white chocolate can burn easily.
- Dip each chip halfway in the white chocolate mixture and place on baking sheet
- Sprinkle marshmallows and walnut onto chocolate as desired
- Allow to cool and set about 30 minutes
- Store in an airtight container. these will keep for about a week.
