Mini Caprese Puff Pastry Tarts

I’m a big believer that sometimes the best and tastiest recipes are the simplest.  This recipe is solid proof on that being true.

Mini Caprese Tarts! Mini bites of heaven with basil, balasmic, tomato, and mozzarella. YUM!We were looking for a simple and delicious appetizer to make for our first Valentine’s dinner as a married couple.  In the past we have always gone out, but this year is different.  This year we are finally married, finally own a home together, and are saving  money for a deck! 🙂  I don’t want our dinner at home to be lacking in any way, and these appetizers will add the perfect romantic, tasty, and easy touch to the meal!

YUM!Caprese Salad is one of my very favorite flavor combinations, and I love thinking of ways to use it in other recipes.  There’s just something about tomato, basil, fresh mozzarella, and balsamic vinegar.  It just works. Mini Caprese Tarts! Combine those delicious flavors with an easy puff pastry, and you have a no-fail crowd pleaser!! These are pretty, refined, SOO yummy, and super easy.  they can be made in about 25 minutes.  WIN!Mini Caprese Tarts! Mini bites of heaven with basil, balasmic, tomato, and mozzarella. YUM!

Mini Caprese Tarts

Ingredients

  • 1 package puff pastry dough
  • 5-6 roma tomatoes, sliced into 18 thin slices
  • 6 ounces fresh whole milk mozzarella, cubed
  • balsamic vinegar
  • 1/2 cup chopped fresh basil

Instructions

  1. preheat oven to 425F
  2. roll out dough on a powdered surface
  3. using the top of a wine glass (or biscuit cutter if you have one), cut out 9 circles per sheet of puff pastry.
  4. place circles on parchment lined baking sheet. if you don't have parchment paper, you can lightly spray a baking sheet
  5. using a knife, scour a inner circle into each puff pastry, about 1/4 of an inch in. pierce the center of each circle 2-3 times
  6. place a slice of tomato on each circle
  7. drip 3-4 drops of balsamic onto each tomato
  8. top each tomato with some fresh basil
  9. place a cube of mozzarella on each tart
  10. bake for 12-15 minutes or until puff pastry is fully cooked and golden brown
  11. enjoy!

Becky woke up on her 30th birthday and came to a startling revelation…she couldn’t cook…anything. She didn’t know the difference between broil and bake, how to bake chocolate chip cookies, or make the simplest of pastas. All of a sudden, she wanted to learn.
