Mini Caprese Puff Pastry Tarts

February 3, 2018 By Becky Hardin Leave a Comment

I’m a big believer that sometimes the best and tastiest recipes are the simplest.  This recipe is solid proof on that being true.

Mini Caprese Tarts! Mini bites of heaven with basil, balasmic, tomato, and mozzarella. YUM!We were looking for a simple and delicious appetizer to make for our first Valentine’s dinner as a married couple.  In the past we have always gone out, but this year is different.  This year we are finally married, finally own a home together, and are saving  money for a deck! 🙂  I don’t want our dinner at home to be lacking in any way, and these appetizers will add the perfect romantic, tasty, and easy touch to the meal!

The beauty of tuna lies in it’s versatility, and the flavors packed in this Spicy Tuna Avocado Panini Melt make this canned star sing! [Read more…]

Tomato & Eggs Florentine with Homemade Hollandaise Sauce

Tomato & Eggs Florentine | My Cooking Spot

Eggs Benedict.

Just the thought of that delicious breakfasty food makes my mouth water, and gets me daydreaming about my next morning off.

It’s such a simple meal, but it’s so buttery and eggy and creamy and wonderful!

Not to mention versatile. I whipped up this Tomato & Eggs Florentine with Homemade Hollandaise Sauce on a whim a few weeks ago. We were sadly out of any sort of ham or bacon for me to use to make the original, but I had some big juicy tomatoes and fresh baby spinach that were willing to do their part to make our breakfast satisfying.
