Have you ever heard of a clafoutis? I hadn’t until I stumbled upon one on Pinterest randomly one day. I thought it was just a cake, until I saw what the inside looked like.

I was intrigued.

A clafoutis is what you’d get if a pancake and a custard had a baby.

A delicious, fruit-packed, eggy baby, dusted with powdered sugar and (ideally) topped with sweet whipped cream.

Traditionally, the French clafoutis is made with cherries, but I switched it up and used the fruit I had in my fridge to bring you this Blueberry Pear Clafoutis. [Read more…]

Honey Grapefruit Roasted Pears

So it is January, the month of fresh starts and big goals. We all know what it feels like to make the resolution to eat healthy only to toss that aside a few weeks later. It is really hard to stay on top of this goal and really make it a habit. BUT today I made these incredible roasted pears. I am actually eating one right now, and they are so yummy that I keep stopping mid typing to get just one more bite. They are SO. GOOD.

First, pears are in season, so they are plentiful and cheap right now! Score!! Also, this is a super simple, healthy dessert that is impressive and comforting.

Delicious slow roasted pears with a fragrant honey grapefruit sauce.

Ginger Pear Cream of Wheat

I’m always on the hunt for new breakfast ideas. Though I could eat a plain bow of cereal every day, sometimes I want something a little different. I’m typically an oatmeal kind-of-girl, but recently discovered how comforting a bowl of Cream of Wheat can be. In this month’s Cooking Light magazine, they shared lots of great shortcuts for meals and I found myself bookmarking practically all of them. I’m all bout shortcuts this month! They shared this great idea to kick up a regular bowl of Cream of Wheat. It couldn’t be easier to prepare. Just sliced pear tossed with some cinnamon and brown sugar and a crushed gingersnap and toasted walnuts on top.

This breakfast is so hearty and will warm you up on those cold mornings. Although it doesn’t have a ton of sugar, it’s just the right amount. The gingersnap cookie also adds a nice crunch and yes, I was tempted to add more like three cookies instead of one!
