Gluten Free Pumpkin Oatmeal Chocolate Chip Bread

‘Tis the season for Pumpkin Bread! What’s better than the traditional recipe? A gluten free Pumpkin Oatmeal Chocolate Chip Bread, chock full of pumpkin, oats and dark chocolate, and baked to perfection.

I cannot get enough pumpkin this season.

As in, I’m making EVERYTHING with it. Including baby food. (Yeah, I’m totally that person. In my defense, it’s really easy to blend up some canned pumpkin puree with a little milk or water, freeze it into 1 oz. cubes, then heat it up whenever it’s time to give the baby solid foods.)

Pumpkin is good in so many combinations and delicious for so many things.

But my favorite recipes for pumpkin are breakfast recipes.

When I was a kid, I was a pretty big fan of vegetables.

I didn’t like some (and still don’t, for that matter), but I mostly ate them without fuss. I think.

We were broccoli and cauliflower lovers… and I especially loved when my mom would sprinkle them with cheddar cheese, bake them for a few so the cheese got melty and delicious, and then serve them up hot as a side dish.

This recipe is a throwback to my childhood and those cheesy veggies… except I’ve elevated it a little bit. While it takes a bit longer than simply sprinkling cheese on top of a roasting veggie, I promise it’s worth the extra effort.

Summertime’s not over yet! Cool off before it cools down with this simple (and individually made!) Blackberry Sangria Spritzer.

Summertime's not over yet! Cool off before it cools down with this simple (and individually made!) Blackberry Sangria Spritzer.

I loved my Blackberry Mint Spritzer that I had to make another drink with blackberries before the summer was over. (Don’t look at me like I’ve lost my mind. I haven’t — it’s still summertime here.)

This time, thought?

We’re makin’ it with alcohol.

Specifically, wine.

Because why not? [Read more…]

I don’t know what the weather’s like where y’all live, but the summer is still going strong in Texas. Which is why I’m steadfastly refusing anything/everything involving pumpkin and the fall since we’ve got at least another month of summertime. [Read more…]
