Banana Maple Oatmeal Cups

January 13, 2016 By Linda Warren Leave a Comment

Banana Maple Oatmeal Cups pin - Bake these easy breakfast treats on the weekend and freeze. A healthy grab and go breakfast for the busy week ahead.

I wasn’t one that always liked oatmeal. To be honest I really hated the stuff! So what changed my mind? I think it was the fact that I could change up the flavoring, like in these Bacon Maple Oatmeal Cups, and bake it for an on-the-go breakfast that turned me into an oatmeal lovin’ fool. And the fact that it’s such a healthy way to start the day is a big plus! [Read more…]

Pumpkin Pie Smoothie Bowl

Pumpkin Pie Smoothie Bowl

Fall is here and nothing reminds me of the season more than pumpkin. It doesn’t seem to matter what form it takes, I love pumpkin anything!

But put pumpkin in a smoothie bowl – and it just about tops everything else pumpkin! So now you are probably asking yourself, what’s a smoothie bowl? Well, it’s exactly what it sounds like. A smoothie that is made thick enough to place in a bowl and eat with a spoon. The best thing about smoothie bowls is you can top it with your favorite healthy toppings, anything from granola to berries, sliced fruit to nuts and seeds or even dates and extra spices. This makes a smoothie bowl so much more satisfying than a smoothie in a glass. It’s that spoon/fork to mouth relationship with food that gives you the feeling that you actually ate a meal rather than just sipped a drink. In other words, it’s perfect!

‘Tis the season for Pumpkin Bread! What’s better than the traditional recipe? A gluten free Pumpkin Oatmeal Chocolate Chip Bread, chock full of pumpkin, oats and dark chocolate, and baked to perfection.

I cannot get enough pumpkin this season.

As in, I’m making EVERYTHING with it. Including baby food. (Yeah, I’m totally that person. In my defense, it’s really easy to blend up some canned pumpkin puree with a little milk or water, freeze it into 1 oz. cubes, then heat it up whenever it’s time to give the baby solid foods.)

Pumpkin is good in so many combinations and delicious for so many things.

But my favorite recipes for pumpkin are breakfast recipes.

When I was a kid, my dad, sister and I wanted to surprise my mom for Mother’s Day with a homemade Key Lime Pie.

I remember slaving away in the kitchen. We juiced tons of key limes. We prepared the Graham cracker crust. We even made whipped cream.

And when that pie came out of the oven, it looked gorgeous.
