Pumpkin Pie Smoothie Bowl

Fall is here and nothing reminds me of the season more than pumpkin. It doesn’t seem to matter what form it takes, I love pumpkin anything!

But put pumpkin in a smoothie bowl – and it just about tops everything else pumpkin! So now you are probably asking yourself, what’s a smoothie bowl? Well, it’s exactly what it sounds like. A smoothie that is made thick enough to place in a bowl and eat with a spoon. The best thing about smoothie bowls is you can top it with your favorite healthy toppings, anything from granola to berries, sliced fruit to nuts and seeds or even dates and extra spices. This makes a smoothie bowl so much more satisfying than a smoothie in a glass. It’s that spoon/fork to mouth relationship with food that gives you the feeling that you actually ate a meal rather than just sipped a drink. In other words, it’s perfect!

Smoothies are also a healthy way to start your day!  Now you can have your cake (er, I mean pie) and eat it too when you whip up this nutritional, low cal smoothie with the same much loved flavor as your favorite pumpkin pie. The best part, you don’t even have to feel guilty about it!

How healthy is this smoothie bowl? Each serving is rich in protein, calcium, potassium and fiber, helping to maintain a healthy digestive system, immune system and blood pressure. The star ingredient of this smoothie, pumpkin, ups the health quotient even more by providing important antioxidants for heart health & plenty of Vitamin A, essential for good eyesight.

Total Time: 5 minutes

Yield: Serves 1.

Pumpkin Pie Smoothie Bowl

Ingredients

  • 1/2 cup almond milk
  • 1 6-oz Greek vanilla or plain yogurt
  • 1/2 cup pure pumpkin
  • 1 Tablespoon maple syrup
  • 1/4 teaspoon vanilla extract
  • 1 scoop protein powder
  • 1/2 teaspoon pumpkin pie spice
  • 1 frozen banana, sliced
  • Pecans for garnish (optional)

Instructions

  1. Place all ingredients in blender in the order given as you want the liquid ingredients to be on the bottom.
  2. Blend until smooth and serve in a bowl as it will be very thick. Garnish with pecans & nutmeg if desired.
