Sweet Potato Pancakes // Erin Skinner from The Speckled Palate for My Cooking Spot

I haven’t always been a sweet potato fan, and thinking about that now makes me a little sad because sweet potatoes are awesome and oh-so-versatile.

Now, I’m a huge proponent of breakfast, and when I was training for a marathon this spring, I started experimenting with foods to eat before and after long runs, including foods to eat the day before these behemoth workouts. Crock Pot Chicken Tortellini Soup // Erin Skinner from The Speckled Palate for My Cooking Spot

I realize it’s still the dog days of summer, and it’s super hot outside. And that, if you live in the South like me, chances are the weather’s not turning toward fall for at least another month to month and a half.

Summertime Corn Chowder // Erin Skinner from The Speckled Palate for My Cooking Spot

We got a ton of locally grown corn in our weekly farmer’s box recently, and I was a bit unsure what to do with all the goodness, as we don’t generally eat a lot of corn.

This harvest reminded me just how delicious corn is.

It also reminded me of how incredible food can be on the first meal… or frozen to become a meal for a later time.

As someone who was born and raised in the South, I know and love blueberries, especially when they’re in season during the summer months. And since I have lived my entire life in the South, though some will disagree that Texas is not the South, I’ve picked up some wonderful blueberry-centric recipes over the years…
