Winter Braising Greens Soup

Another wintery month means continued sparse pickings at the local farmers markets. Without doing the work to preserve produce from growing season – the local options become quite limited. Squash, potatoes, and greens populate the sparse tables of most of the farm booths. The later one, the greens, begins to pique my interest because they look a bit different than during the rest of the year.

During these chillier months, all the greens are sold in miniature size. Completely adorable but also perfect for cooking with since there’s no cutting or de-stemming required. I like to buy the pre-washed bags of braising greens for the quick convenience – great for quick weeknight dinners like pureed soups.

This soup meets a number of allergy friendly requirements as long as you use vegetable stock and oils considered safe for whatever needs you’re serving. It’s vegan, gluten free, and makes a great way to get in a good serving of dark leafy greens.

Croque-Monsieur

Croque-Monsieur

My husband and I are big sandwich people, especially when cheese is involved! We love having grilled cheese and soup for dinner this time of year. Although it is starting to get really warm here in AZ, we like to pretend it’s cold inside.

I had my first Croque-Monsieur about a year ago at a cafe for lunch one day and I couldn’t believe it took me so long to discover this amazing sandwich. A Croque-Monsieur is a French grilled cheese sandwich made with ham and Gruyere cheese, but my favorite part? The Béchamel sauce on top! It makes the sandwich so creamy! This is a sandwich that you can make for brunch, lunch, and dinner. Serve it next to a light salad or a bowl of soup and call it a day! It’s easy to make, but it looks so much fancier than your typical grilled cheese.

Penne alla Moscato

I love Penne Alla Vodka, I actually love any pasta that includes cream. I have made this recipe a few times, but I wanted to try it by eliminating the vodka and substitute it with some wine. I wondered what type of wine I should use with this recipe and thought that Moscato might be a good choice. It is sweeter than a dry white wine, but that is what I thought would make this recipe work.

Since I was using canned tomatoes, the sweetness of the wine could balance the acidity of the tomato sauce without using sugar as I usually would.

I was right, there was not any sweetness indicated in the sauce but it brought a boldness and help balance out all the flavors while having them compliment each other more than I could have imagined.

Chicken and Leek Pie

I finally gave up the luxury of Los Angeles’ unfailingly constant sunny weather for the chilly winter gloom of North Georgia. Roswell, GA, specifically. Yes, after three days of driving, I finally made it! The house that I moved into is extremely old and doesn’t heat up as well as my old apartment, so I’ve been relying on hot soups and pot pies to warm me. I thought of a perfect savory pie to make the other day, my Chicken and Leek Pie. Not only is it chock full of creamy leeks and chicken, but the crust is whole wheat!
