It might not be pretty, but I can promise y’all that it’s delicious… and really, that’s all that matters. (Says the girl who was weirdly selective of cookies and every other food when she was a kid because I only wanted to eat pretty things. I know. Rosemary Roasted Chicken with Vegetables

Few things are better than a homemade dinner, particularly one that you know is wholesome and can be counted on for leftovers. Roasted chicken with vegetables is one of my favorite meals to make because I know I can stretch it. Call me a dinner time hacker but I love it when I can make meals go further, stretching my dollars and my time. Chicken enchiladas with the leftover chicken meat, topping salads with leftover veggies, and creating a sort of liquid gold known as bone broth (or homemade chicken stock) are some of favorite ways to use leftovers from this meal. Sweet Potato Quinoa Chilli

Not to toot my own horn, but I make a really good chili (toot! toot!). But I never gave it any additions – no noodles, especially no beans. It just wasn’t my preference.

To me, basically chili is a good sauce and some ground beef. From there you can add whatever you would like to the top – sour cream, onions, crackers, cheese, the lists go on and on. But I’ve always wanted to enhance those flavors.
