Tomato & Eggs Florentine with Homemade Hollandaise Sauce

May 20, 2015 By Erica Acevedo 1 Comment

Tomato & Eggs Florentine | My Cooking Spot

Eggs Benedict.

Just the thought of that delicious breakfasty food makes my mouth water, and gets me daydreaming about my next morning off.

It’s such a simple meal, but it’s so buttery and eggy and creamy and wonderful!

Not to mention versatile. I whipped up this Tomato & Eggs Florentine with Homemade Hollandaise Sauce on a whim a few weeks ago. We were sadly out of any sort of ham or bacon for me to use to make the original, but I had some big juicy tomatoes and fresh baby spinach that were willing to do their part to make our breakfast satisfying. Strawberry Lemonade Muffins // @speckledpalate for @mycookingspot

It’s officially the springtime!

The spring always makes me think of strawberries, even though I could happily enjoy strawberries year-round. (And I kind of did during the final portion of pregnancy… they were just SO good with everything!)

You know what else I think about during the springtime?

Lemonade.

Parmesan Pretzel Bites

Parmesan Pretzel Bites // @speckledpalate for @mycookingspot

I have a thing for pretzels.

It’s been a part of my life since I was a kid. We’d visit my family in Pennsylvania once a year, and when there, we always inevitably ended up at the mall, which prominently featured an Auntie Annie’s, my favorite mall food snack.

Back then, we didn’t have an Auntie Annie’s in Memphis, so it was a special treat.

And my pretzel obsession grew. I’m partial to their Cinnamon-Sugar Pretzels, though I love a good savory pretzel every once in a while, too. [Read more…]
