Hi all, happy Monday! It’s Cat from The Rustic Willow here again with another delicious recipe! Right smack dab in the middle of the holiday season, we all tend to get sucked up into the chocolatey desserts, cheesy potatoes, mounds of pasta, and everything else filled with calories and carbs. Pumpkin Pie Smoothie Bowl
Fall is here and nothing reminds me of the season more than pumpkin. It doesn’t seem to matter what form it takes, I love pumpkin anything!
But put pumpkin in a smoothie bowl – and it just about tops everything else pumpkin! So now you are probably asking yourself, what’s a smoothie bowl? Well, it’s exactly what it sounds like. A smoothie that is made thick enough to place in a bowl and eat with a spoon. The best thing about smoothie bowls is you can top it with your favorite healthy toppings, anything from granola to berries, sliced fruit to nuts and seeds or even dates and extra spices. This makes a smoothie bowl so much more satisfying than a smoothie in a glass. It’s that spoon/fork to mouth relationship with food that gives you the feeling that you actually ate a meal rather than just sipped a drink. In other words, it’s perfect!
Hummingbird Cake
I finally got around to baking a Hummingbird Cake! Yay me! Now, some of you are probably saying, what in the world is a Hummingbird Cake? Well, I would have said the same thing a few years ago but, since then, I have had a piece in almost every restaurant that advertises it in the Florida Keys. I kept telling myself I was going to make one day, and it would be even better than any I had tasted, and that day finally came. And I couldn’t be happier with the results (although my waistline might complain a little because it’s so hard to resist!).
The cake turned out rich, spicy, a little nutty and full of the fruity goodness of bananas and pineapple. It’s a tropical treat not to be missed!
Peanut Butter Banana Marble Muffins
These Peanut Butter Banana Marble Muffins are the perfect way to have peanut butter cups for breakfast, and not feel (quite so) guilty about it!
There seems to be a theme around here when it comes to my posts.
A vast majority of the treats I share with you all feature the same five superstar ingredients: bananas, strawberries, peanut butter, chocolate, and hazelnut spread.
Am I ashamed of it? Never. You like what you like, right?
Maybe one of these days, I’ll break away and share something with crazy ingredients. Like beets. Or oysters. Or blue cheese.
(That last one is not likely, for the record.)
For now, how about we just dive right in and take a bite of these yummy Peanut Butter Banana Marble Muffins, my newest breakfast addiction! [Read more…]
