Brownie Ice Cream Cones

I scream, you scream, we all scream for ice cream . . . and brownies.  Ice cream is always better when it’s sitting on top of something á la mode style.  Cobblers, pies and cake are all amped up a notch when accompanied by a big scoop of ice cream.

It will soon be hot, hot, hot down here in the south (my kind of weather) and my Brownie Ice Cream Cones are the perfect snack or dessert when you’re craving something chocolate, cold and creamy all at the same time! I’ve never seen a child or adult turn one of these babies down.


The small cones fit perfectly into the small hands of children.  And because they’re petite, you won’t feel stuffed.

The homemade brownie batter is cooked inside the ice cream cones. After cooling, add a scoop of ice cream and you’re good to go.

Helpful Hint:  When I prepare these for a party I go ahead and scoop the ice cream on top of the brownie filled cones and put them in the freezer a few hours in advance.

I usually have a little brownie batter left after filling the cones.  I place it in a ramekin and bake it alongside the cones.  My husband always eats it with a big scoop of vanilla bean ice cream.

Brownie Ice Cream Cones

Ingredients

  • 1 package German sweet chocolate (4 oz.)
  • 1/4 cup butter
  • 3/4 cup sugar
  • 1/2 cup all-purpose flour
  • 1 tsp. vanilla extract
  • 12 cake-style ice cream cones (about 3" tall)
  • 12 scoops vanilla ice cream
  • colored sprinkles, optional

Instructions

  1. Melt the chocolate and butter in a saucepan over low heat, stirring frequently.
  2. Cool slightly and pour into a bowl. Add sugar and eggs and mix well.
  3. Stir in flour and vanilla.
  4. Place the ice cream cones in muffin cups and fill 1/2 full with brownie batter.
  5. Bake at 350º for 20-25 minutes or until brownies are set on top and a toothpick inserted near center comes out with moist crumbs (do not overbake).
  6. Cool completely.
  7. Top each with a scoop of ice cream and sprinkles.
  8. Enjoy!

    this is such a great idea! 🙂 i love my brownies with ice cream.. and i don’t really eat ice cream unless i have brownies! haha i guess i just really love brownies and am happy with anything accompanying them.

    These look great! I’m wanting to make these for my daughters birthday party this weekend. I’ve been told if you make cupcake cones ahead of time, the country will get soggy. have you had this problem?
