Happy Friday, My Cooking Spot readers!!

I’m super excited to be a new contributor for My Cooking Spot, and I have a delicious recipe to share that’s perfect for a warm summer day.

It requires absolutely no cooking and takes less than 10 minutes and very little culinary ability to whip up.

While I love living in New Orleans – the food, the location, the fun, the list goes on… – the weather can be quite warm {read: hot & humid}. Don’t take this as a complaint though; I love the hot weather! I’d take a 100+ degree heat index any day over anything below 40 in a heart beat.

Skinny Coffee Cake – Half the Fat & Calories

Hi Everyone! My name is Stephanie and I blog over at Eat. Drink. Love. I’m so excited to be a contributor to My Cooking Spot!

One of my favorite parts about blogging is that I love the challenge of taking a recipe that would normally be considered to be unhealthy and lightening it up! Today I am sharing my low-fat coffee cake recipe with you. The typical slice of coffee cake can run anywhere between 400-500 calories and can have over 20 grams of fat! My version contains just 225 calories and 7.9 grams of fat for a generous slice!

One of my favorite parts of coffee cake is the crumb topping, but that crumb topping will cost you a lot of calories. I wanted to try to create a version that still gave me that cinnamon sugar flavor without having to do a crumb topping, so instead I did a swirl of cinnamon sugar inside the cake, and really, I didn’t even miss the crumb topping! I baked mine up in a bundt pan and then dusted the top with some additional cinnamon and sugar. This cake is perfect to serve for guests, or in my case, co-workers!

In the year or so prior to going gluten free, my breakfasts typically subsisted of a latte and a massive blueberry or lemon curd scone.  Aside from a bowl of yogurt and fruit – it’s one of the most fulfilling breakfasts I can think of.  So after going gluten free one of my first priorities was to learn to bake scones with a new selection of flours.

My first attempt at scones (actually the first gluten free thing I ever baked) was made with 100% white rice flour. They were fluffy but incredibly gritty – not what I remembered. So I continued to experiment and by year two, I got to what my husband and I call “scookies”. These were treats that tasted like scones, had the right consistency, but flattened out like a cookie. It was year three when everything finally fell in place after my mom gifted me a cast iron mini-scone pan. Turns out, this makes all the difference for well-shaped gluten free scones.

Country Apple Turnovers with Sweet Cream Icing

I love dessert. I especially love dessert that I eat at home in my cozy slippers while sitting on the couch. Especially when it is chilly outside with the sound of rain. You know what I love even more? When the delicious dessert I am eating took no time at all, but tastes like it is a delicious difficult dessert.
