Easy Homemade Cilantro Lime Rice with Pop & Cook

I am in the thick of the summer here in Phoenix. We technically have at least three more months of mega hot days. So I am constantly looking for lunch ideas that I can make quick, easy, perfect for a hot day. I hate going out in the day just to get something to eat when it is so hot out.


So, I have been making some salads and sandwiches at home. I have been craving some burritos lately, but then I thought I should just make a burrito bowl. I can have my salad and burrito in one bowl.

Filipino Pancit with Grilled Turkey over Zucchini “Noodles” (Low-Carb)

Just recently, I had my first experience with Filipino food. I am sad to say that I have never eaten any “authentic” foods that are Filipino recipes.  Our lovely neighbors brought us over a Filipino feast last week and it was so yummy!
