Easy Homemade Cilantro Lime Rice with Pop & Cook

I am in the thick of the summer here in Phoenix. We technically have at least three more months of mega hot days. So I am constantly looking for lunch ideas that I can make quick, easy, perfect for a hot day. I hate going out in the day just to get something to eat when it is so hot out.


So, I have been making some salads and sandwiches at home. I have been craving some burritos lately, but then I thought I should just make a burrito bowl. I can have my salad and burrito in one bowl.

Well, hey there! It’s Becca again from Two Places at Once. I’m so excited to share my latest recipe with y’all today. Is it just me, or has life been a little crazy lately? My husband recently graduated with his PhD (yay!) so that’s been the focus of our life lately. Working towards his defense, preparing for graduation, hosting family, and traveling has made life a little more hectic. Don’t get me wrong, all of this is good. Filipino Pancit with Grilled Turkey over Zucchini “Noodles” (Low-Carb)

Just recently, I had my first experience with Filipino food. I am sad to say that I have never eaten any “authentic” foods that are Filipino recipes.  Our lovely neighbors brought us over a Filipino feast last week and it was so yummy! The husband is from the Philippines and has been cooking his family recipes for years.
