Happy Friday, My Cooking Spot readers!!

I’m super excited to be a new contributor for My Cooking Spot, and I have a delicious recipe to share that’s perfect for a warm summer day.

It requires absolutely no cooking and takes less than 10 minutes and very little culinary ability to whip up.

While I love living in New Orleans – the food, the location, the fun, the list goes on… – the weather can be quite warm {read: hot & humid}. Don’t take this as a complaint though; I love the hot weather! I’d take a 100+ degree heat index any day over anything below 40 in a heart beat.

Just recently, I had my first experience with Filipino food. I am sad to say that I have never eaten any “authentic” foods that are Filipino recipes.  Our lovely neighbors brought us over a Filipino feast last week and it was so yummy! The husband is from the Philippines and has been cooking his family recipes for years.

Chicken Pot Pie Pockets


There’s a chill in the air, and the colder it gets, the more we crave hot food! These chicken pot pie pockets are the perfect mix of a home-style food with convenience. 

To make these, I used The Pioneer Woman’s recipe (with a few tweaks) for the first half of the recipe.  Since I made a few changes, here is my version of her recipe, altered for pie pockets.

Healthy Pasta with Garlic Cream Sauce: Fave Foods Made Healthy Series

There are many things that I am working on attaining.  A long list of things; be it in the kitchen or in life, things I want or am striving to learn or do better.  But there is one thing that I feel I excel in, not that I don’t continue to expand and evolve and learn anew anytime that I am able.  This one thing is pasta.

Breakfast, lunch or dinner, in the early rays of a sun lit afternoon or the wee hours of the night at three am; I can whip up a plate of mouth-watering pasta.  As long as I have a box of noodles the possibilities are endless.  It has nothing to do with what I have in the cupboard or the fridge.  In fact, I take it as challenge the barer the kitchen is!  My secret is not only in the simplicity of the dish, but also the quality of the ingredients.  I mean come on, let’s be honest, if you are making a dish with three ingredients, you can’t skimp on the quality of what you use!
