Savory muffins. 


Everyone loves sweet muffins with bits of blueberries or chocolate chips in them, but these bite-size breakfast bites are an amazing, life-changing recipe. Soft, warm and filled with sweet and salty flavors, you’re going to love these Apple Cheddar Muffins.

They’re a cinch to whip up for breakfast, brunch or teatime, but you could totally serve them alongside a hearty soup dinner or as a side dish at a barbecue. The bite of the cheddar and the sweetness of the apples will liven any plate. Enjoy!

Cook Time: 20 minutes

Total Time: 40 minutes

Yield: 12-18 muffins

Apple Cheddar Muffins

For a hearty supper, try these with a bowl of creamy broccoli soup. For a light lunch, they can be served with a salad.  For breakfast they are delicious served hot with berry preserves.

Ingredients

  • 2 cups all purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • Freshly ground black pepper (optional)
  • 1 cup roughly grated sharp cheddar cheese
  • 1 cup chopped Granny Smith apple, with peel (about one large apple)
  • 1 large egg
  • 1/2 stick (2 oz) unsalted butter, melted and cooled
  • 1 cup whole milk

Instructions

  1. Preheat oven to 400°F.Grease 12-18 muffin cups. Foil or paper muffin liners can be used
  2. Sift flour, baking powder and salt into a large mixing bowl.  Add pepper,  if desired, cheese and apple. Use your fingers to evenly mix all the ingredients together.
  3. In a small bowl, whisk the egg, gradually adding the melted butter and milk.
  4. Make a well in the center of the flour mixture.  Pour the egg mixture into the well, and gently incorporate the dry ingredients with a spatula until the mixture is all lightly moistened.
  5. Scoop the batter into the muffin pan.  Bake for 20 minutes, until tips are browning and the muffins spring back when lightly touched in the center.
  6. Turn onto a wire rack to cool a bit before serving.
