Orange Pistachio Asparagus

I’ve been on an orange and pistachio kick lately – two of my favorite flavors.

I firmly believe the old adage that we eat with our eyes first so I always pay special attention to presentation.  I don’t like to serve anything that isn’t appealing to the eye.

Asparagus is a beautiful spring vegetable and one of the easiest side dishes to prepare. Pistachio Orange Asparagus takes my favorite roasted veggie to a whole new level.  The orange juice and grated peel adds a refreshing citrus note and the intense flavor of the toasted pistachios combines wonderfully with the tangy citrus flavor of the orange.

When prepping asparagus, always snap off the woody ends and discard.  If you’re in doubt of how far up the stalk to go, bend the asparagus spear and it always breaks at the correct place.  To save time, I grab a few spears at a time, stems in one hand and the woody end in the other and just snap away.  It doesn’t take long at all.

Brownie Ice Cream Cones

I scream, you scream, we all scream for ice cream . . . and brownies.  Ice cream is always better when it’s sitting on top of something á la mode style.  Cobblers, pies and cake are all amped up a notch when accompanied by a big scoop of ice cream.

It will soon be hot, hot, hot down here in the south (my kind of weather) and my Brownie Ice Cream Cones are the perfect snack or dessert when you’re craving something chocolate, cold and creamy all at the same time! I’ve never seen a child or adult turn one of these babies down.

The small cones fit perfectly into the small hands of children.  And because they’re petite, you won’t feel stuffed.

Easy Strawberry Tartlets

I’m yearning for spring after a winter storm reached its icy fingers down south and left a 3° windchill in it’s path.  Brr.

I decided to give spring a nudge by whipping up my easy strawberry tartlets.  Cream cheese, a touch of honey, brown sugar and strawberries come together to form an elegant dessert that sits inside a crisp wonton cup. It’s the perfect bite!  And it’s the ideal dessert for spring.

When I’m planning a party, I always try to include foods that are individually portion sized, easy to eat and doesn’t require a lot of fuss.  The wonton cups can be made in advance and filled right before your guests arrive.  The filling can also be made a day ahead and stored in the fridge.
