My Summer Plans and Healthy Snacks

May 11, 2015 By Erin Kennedy 1 Comment

I live in Phoenix, so one of my favorite things to do all year round is swim. I swim for fun, and I also take swimming aerobic classes. They are my favorite thing to get in the cool pool when it is summer and the temperature is over 100 degrees and do a great workout.

Keeping with wanting to keep healthy, I am usually famished right before I hit the pool or right after. I love that I can grab a 90-calorie snack from Kozy Shack® that I can bring with me and enjoy like a daily treat without the guilt. I have been eating the Simply Well® Rice Pudding, but they also have the yummy Simply Well® Tapioca Pudding  for only 90 calories, no sugar added and gluten-free.

How To Make a Perfect Poached Egg

I love poached eggs. However, this type of egg has not been seen much at my house because I have always been intimidated to make them. I always thought they were way more difficult than they were.

These photos are from my very first attempt at making a poached egg, and it turned out perfectly, and it was not difficult at all! I love a poached egg so much, and now I make them all the time. Poached eggs with bacon, poached eggs on asparagus, poached eggs with tomato and avocado, and of course, now I can make eggs benedict!

Slow Cooker Butter Pot Roast

April 27, 2015 By Erin Kennedy 2 Comments

I saw this recipe on facebook that a friend posted in her timeline. She said it was so good that you might cry when it is gone. I am always looking for easy recipes that I can whip up. I am also on a low-carb diet, so this worked out perfectly for my diet.

My husband is super picky, but with the ingredients, I thought he would be on board, and we both loved it. This really is a buttery, flavorful pot roast like I have never tasted before.

It is fab because you just need to throw everything into a crock pot and let it cook. There is not much preparation at all. Especially if you can find a chuck roast that is already cut into cubes. Throw all the ingredients in your slow cooker and dinner is served. You don’t need to add anything else. I thought I would need liquid, but it created its own liquid with the butter, the juice from the meat and liquid from the mushrooms and onions. My husband hates onions, but they disintegrated and gave great flavor but not that onion taste.

Easy, fast and delicious.

My Newest Guilt-Free Snack Love

April 14, 2015 By Erin Kennedy 1 Comment

It is spring, and here in Phoenix, it is already summer temperatures. So if you live here, you don’t have as much time to get bathing suit ready than other states. I have to start my health regime early in the year if I want to look decent in a bathing suit.

Needless to say, I have been trying to workout and eat better for a few weeks now. However, I’m always trying to come up with guilt-free snack ideas, and sometimes I run out of ideas, or want to just give in because I don’t have something easy to grab and go.

A sweet snack has come into my life a I couldn’t be happier. Kozy Shack® has some delicious snack options and they are all 90 calories. I love this snack because I can just grab it and go. Pack it up with a spoon and take it to work, take it to school. I like to pack it up and take it with me to my workout. I like to have a quick snack before my workout, or right after. I am usually ravenous after I work out. This is the perfect snack that makes me feel satisfied and just 90 calories!
