Beet Pickled Eggs

There are some meals that you will always love and think of your childhood as you enjoy them – mac n cheese, Oreos, square pizza . . .  pickled eggs. All those foods that are bad for you and you can’t eat on a regular basis.  Unless you have a very high metabolism.

There are also foods that people just won’t understand why you like them. This is me and pickled eggs. I understand. I get it. Pickled eggs . . . They sound gross if you’ve never had them. Plus, they’re pink eggs. Eggs aren’t supposed to be pink. I’ve had friends asked me to send pictures because they’re so confused as to what a pickled egg could be. They’re response? “Girl, eggs aren’t supposed to be pink. But they are beautiful and delicious. I promise.

Smokey Chocolate Chip Caramel Cookies

I am in the camp that chocolate chip cookies should not have very many chocolate chips. I prefer to love on all the flavors. However, I realize I’m one of the few. So after much searching, I found a secret ingredient that makes them good enough for me and good enough for everyone else . . . liquid smoke.

As the name suggests, liquid smoke is a liquid that tastes like smoke—it replicates the flavor produced by smoke-curing without actually requiring you to smoke anything. When shopping for liquid smoke, be aware that some brands add seasonings, flavorings like molasses or vinegar, or colorants like caramel. Liquid smoke should just be smoke and water, and there are brands that are exactly that simple.

Meatloaf Burgers

Grilling out hamburgers has always been my favorite, but not until recently did I start doing so myself. It was one of those recipes that you know is going to be so easy, but you’re just not willing to try.

Well, one day last week I started to make meatloaf because it just sounded really good. Then I got this brilliant idea to make into patties. Ok, fine, I’ll admit it I really wanted bread and cheese too so a meatloaf burger was created.

Spicy Siracha Baked Mac ‘n’ Cheese

My husbands favorite meal is macaroni and cheese – this shouldn’t surprise most people as he is normal man. He also LOVES Siracha. He puts it on most things and will put it on almost anything. So for our first meal in our new house that is 1200 miles from home (we’ve recently moved from Indiana to Florida) I knew exactly what to make him – Siracha Baked Mac ‘n’ Cheese.
