No-Churn Butter Pecan Ice Cream

While temperatures may be getting cooler outside, it’s never too cold for ice cream. I’m an all-year-round kind of ice cream person, and I love the fall flavors that start popping up in grocery stores around this time of year. Pumpkin, salted caramel, apple pie. Each year I make it my mission to try all the new ones I haven’t seen before.

One flavor that always makes me think of fall is butter pecan. It’s doesn’t scream fall, but it reminds me of pecan pie. There is even a local popsicle chain here where I live that has a butter pecan pop in the fall, too! It’s creamy and buttery, and has sugared pecans on the bottom. I decided it was about time to channel that into a homemade ice cream!

In these last few days of summer I have been craving fresh fruit! My husband and I love to indulge in a little sweet each night but have had lots of discussions about our health and not wanting to consume Sonic ice cream multiple times a week 😉

This fresh and simple dessert came to mind one night when I was craving something sweet but didn’t want to spend more money at the store! Because who is going to spend the time making shortcake when you could just sub already made biscuits and get just as good of a dessert? Not this girl.

Peaches and Cream Popsicles

Cool down this August with slightly sweet and dreamy Peaches and Cream Popsicles! Sprinkle sliced peaches with sugar, letting them steep in the beautiful liquid. Strain the peaches and save the juices… then combine the juice with Greek yogurt and a few peaches to create these decadent popsicles!

Peach season is about to come to an end, and this makes me incredibly sad because peaches might be my all-time favorite fruit.

When I was a kid, I have distinct memories of slicing up peaches to put atop my cereal in the mornings. If you haven’t tried this, I totally recommend it! I also have memories of peach cobblers and crumbles and pies and all kinds of desserts.

Ever since I found peaches at my grocery this summer, I’ve been enjoying them by the dozen. Which has actually become kind of ridiculous because, well, no normal person should go through several pounds of peaches in a month. Right?

Whatever the case, I had a few peaches left in my last batch and decided to make popsicles using them. [Read more…]
